  • 2 1/2 cups plus 1 tablespoon all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries
  • 1 cup unsalted butter
  • 1 3/4 cups granulated sugar
  • 1 large egg
  • 1 large yolk
  • 2 teaspoons pure vanilla extract
  • 2 or 3 drops red food coloring (optional)
  • 2 tablespoons Dutch-process cocoa powder
  • Sprinkles or granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350F (180C) and line three baking sheets with parchment paper.
  2. In a medium bowl, combine the flour, baking soda, and salt; set aside.
  3. Use a food processor to pulverize freeze-dried strawberries into powder.
  4. In a stand mixer, cream butter until light, then add sugar and beat well. Mix in egg, yolk, and vanilla.
  5. Stir in dry ingredients until just combined.
  6. Divide dough into three portions; flavor one with strawberry powder and another with cocoa powder.
  7. Shape into balls and roll in sprinkles or sugar.
  8. Bake for 10 to 11 minutes until puffed; cool on racks.
