- 1 avocado, halved and sliced
- 1 cup cherry tomatoes, halved
- 1 cup cooked or canned corn, drained
- 1 cup fresh parsley or arugula
- 1 tsp sesame seeds
- 1 tsp olive oil
- Salt and pepper to taste
- In a nonstick pan over medium heat, add a bit of oil and crack in the egg. Cook sunny-side-up until the white is set but yolk remains runny.
- In a bowl, arrange halved avocado, avocado slices, cherry tomatoes, corn, and fresh parsley or arugula.
- Place the fried egg in the center of the bowl. Drizzle olive oil over the halved avocado and sprinkle sesame seeds on the sliced avocado.
