  • Fresh herbs (rosemary, thyme, bay leaf)
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Season beef cubes with flour, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Heat vegetable oil in a Dutch oven over medium-high heat; sear seasoned beef until browned.
  3. Sauté chopped celery, onions, and minced garlic in the same pot until softened.
  4. Stir in tomato paste and beef base; pour in beef stock and apple vinegar.
  5. Add fresh herbs; cover and simmer for 2 hours.
  6. Incorporate cubed potatoes and chopped carrots; cook for an additional 30-45 minutes until tender.
