  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 pound linguine pasta
  • 6 tablespoons butter
  • 6 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt, or to taste
  • Pinch of red pepper flakes, optional
  • Chopped chives, for garnish

Instructions

  1. In a bowl, toss the chicken pieces with olive oil, Cajun seasoning, paprika, garlic powder, and black pepper. Ensure the chicken is evenly coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. While the chicken is cooking, cook the linguine pasta according to package directions until al dente. Drain the pasta and set aside.
  4. In the same skillet, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  5. Whisk in flour and cook for 1 minute to create a roux. Gradually whisk in milk and chicken broth until smooth.
  6. Bring the sauce to a simmer, stirring constantly. Reduce heat to low and simmer for 5-7 minutes or until slightly thickened.
  7. Stir in cheddar cheese and Parmesan cheese until melted and smooth. Season with salt and red pepper flakes if using.
  8. Add cooked chicken and drained pasta to cheese sauce. Toss to coat everything evenly.
  9. Serve immediately, garnished with chopped chives.
