  • 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour, spooned & leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/4 cup (225g) semi-sweet chocolate chips
  • 12 regular vegan marshmallows, cut in half
  • one 4 ounce (113g) semi-sweet chocolate bar, finely chopped
  • 1/3 cup (35g) crushed graham cracker crumbs

Instructions

  1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Mix in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually incorporate into wet mixture until combined; fold in chocolate chips.
  4. Chill dough for at least 1 hour.
  5. Roll dough into balls and place on prepared baking sheets. Bake for 10-11 minutes until edges are golden.
  6. Top each cookie with half a vegan marshmallow and broil briefly until toasted.
  7. Drizzle melted chocolate over marshmallows and sprinkle with crushed graham crackers.
