  • 2 tablespoons pure maple syrup
  • 2 teaspoons vanilla essence
  • 2 teaspoons baking powder

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup plus 2 tablespoons mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine cottage cheese, rolled oats, eggs, maple syrup, and vanilla essence. Blend until smooth.
  3. In a mixing bowl, whisk together baking powder, cinnamon, nutmeg, and salt.
  4. Pour the blended mixture into the dry ingredients and stir until just combined. Fold in mini chocolate chips.
  5. Fill greased muffin tins about three-quarters full with batter and bake for approximately 22 minutes or until a toothpick comes out clean.
