  • 1 cup granulated sugar (or coconut sugar)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour (or almond/gluten-free flour)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the halved cherries on a baking sheet and roast for 10-15 minutes until soft.
  2. In a saucepan over low heat, melt the butter. Stir in the granulated sugar until combined. Add eggs one at a time and mix in vanilla extract.
  3. In a separate bowl, whisk together cocoa powder, flour, and salt. Fold into the wet mixture until just combined.
  4. Gently fold in the roasted cherries.
  5. Pour batter into a greased 9×9 inch baking pan and bake for 20-25 minutes, or until a toothpick comes out with moist crumbs.
  6. Allow cooling for about 10 minutes before cutting into squares.
