  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin purée (blotted)
  • 1 teaspoon vanilla extract
  • 1 egg yolk
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini vegan marshmallows
  • 1/2 cup graham cracker pieces

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add pumpkin purée, vanilla extract, and egg yolk; mix well.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Gently fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  6. Scoop dough onto the prepared baking sheet about 2 inches apart. Bake for 10–12 minutes or until edges are set but centers appear slightly soft. Allow cooling before serving.
