  • 8 flour tortillas (8-inch size)
  • 2 cups shredded mozzarella cheese
  • 1 cup mini turkey pepperoni slices
  • 1 cup pizza sauce, plus extra for dipping
  • ½ cup sliced black olives (optional)
  • ½ cup diced green bell pepper
  • ½ cup sliced mushrooms (optional)
  • 1 teaspoon Italian seasoning
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On each tortilla, spread 1 tablespoon of pizza sauce, followed by 2–3 tablespoons of mozzarella cheese. Add turkey pepperoni and any desired toppings.
  3. Roll the tortillas tightly and place them seam-side down in a greased baking dish.
  4. Pour remaining pizza sauce over the rolled enchiladas, then top with the rest of the mozzarella cheese, grated Parmesan, and Italian seasoning.
  5. Bake uncovered for 20–25 minutes until the cheese is melted and bubbly.
  6. Serve warm with extra pizza sauce on the side.
