  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened. Gently smash the berries as they cook. Allow to cool.
  2. Thaw puff pastry sheets for about 20-25 minutes until pliable. Roll out each sheet into a rectangle on a floured surface.
  3. Spread half of the goat cheese over each sheet followed by half of the cooled blackberry jam.
  4. Cut each rectangle into 12 strips; fold each strip in half lengthwise and twist gently while stretching.
  5. Preheat the oven to 400°F (200°C). Place twisted pastries on a parchment-lined baking sheet.
  6. Brush with beaten egg wash; sprinkle with lemon zest, raw sugar, and thyme mixture. Bake for 16-18 minutes until golden brown.
