  • 3 tbsp sugar
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/2 cup semi-sweet chocolate chips (melted)
  • 1 egg
  • Optional toppings: whipped cream and mini chocolate shavings

Instructions

  1. Preheat your oven to 325°F (165°C). Line a muffin tin with mini cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until crumbly.
  3. Press the mixture into the bottom of each liner to form the crust.
  4. Beat softened cream cheese until smooth; add powdered sugar and vanilla extract and mix well.
  5. Mix in sour cream until combined. Melt chocolate chips in the microwave, let cool slightly, then stir into the mixture along with the egg.
  6. Spoon the cheesecake filling over each crust, filling about three-quarters full.
  7. Bake for 18-20 minutes until set but slightly jiggly in the center. Cool in the pan for 10 minutes before transferring to a wire rack.
  8. Drizzle with melted chocolate and garnish as desired.
