  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 bag (12–16 ounces) frozen or fresh mini meatballs (beef or chicken)
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach or kale, roughly chopped
  • 1/4 cup grated Parmesan cheese (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add onion, carrots, and celery; cook for 5–6 minutes until softened.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
  5. Add meatballs and reduce heat to simmer; cook for 10–15 minutes until heated through.
  6. Stir in tortellini and cook according to package instructions (about 5–7 minutes).
  7. Add greens and cook until just wilted.
  8. Taste and adjust seasoning as needed before serving hot with grated Parmesan.
