  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 bag (12–16 ounces) frozen or fresh mini meatballs (beef or chicken)
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach or kale, roughly chopped
  • 1/4 cup grated Parmesan cheese (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, sliced carrots, and sliced celery; sauté for 5–6 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in the chicken broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
  5. Add mini meatballs and reduce heat to a simmer; cook for 10–15 minutes until heated through.
  6. Stir in tortellini and cook according to package instructions (about 5–7 minutes).
  7. Add chopped spinach or kale and cook until wilted.
  8. Taste and adjust seasoning as needed before serving hot with grated Parmesan cheese.
