  • 2 medium sweet potatoes (about 500g), peeled and chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tbsp freshly squeezed lime juice
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup plain breadcrumbs
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. Boil sweet potato chunks in salted water until fork-tender, about 15-20 minutes. Drain well.
  2. In a mixing bowl, mash the sweet potatoes until smooth but slightly chunky.
  3. Add black beans to the mashed sweet potatoes and mix until combined.
  4. Stir in lime juice, chopped onion, minced garlic, breadcrumbs, and cilantro if using. Season with salt and pepper.
  5. Shape the mixture into patties about half an inch thick and place them on a lined baking sheet.
  6. Preheat oven to 400°F (200°C) and bake patties for 25-30 minutes until golden brown, flipping halfway through.
