Ingredients

Scale
  • 1 cup unsalted butter, cold and cubed
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chunks
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the cold cubed butter, brown sugar, and granulated sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Gently fold in the semisweet chocolate chunks and toffee bits until evenly distributed.
  6. Use a cookie scoop to place large dough balls (about 1/3 cup each) onto the prepared baking sheet.
  7. Bake for 8–10 minutes until golden around the edges but still soft in the center.
  8. Allow cookies to cool on the pan for about 10 minutes before transferring them to wire racks.
