  • 1 tbsp powdered sugar

  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts
  • Yellow food coloring (if using white chocolate)

Instructions

  1. Prepare the crust base: Combine graham cracker crumbs, melted butter, and sugar; press into silicone molds and freeze until firm.
  2. Make the lemon cream filling: Whip heavy cream to soft peaks, fold in lemon Greek yogurt, powdered sugar, and lemon extract; chill briefly.
  3. Prepare the shell coating: Melt white chocolate or candy melts; coat silicone molds and chill until set.
  4. Assemble: Pipe mousse into molds, add lemon curd center, and top with more mousse; seal with crust base.
  5. Freeze: Allow at least 4 hours to set before unmolding.
