  • 2 tablespoons cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • 2 cups cooked rice (white, brown, or coconut rice)
  • 1 avocado, sliced
  • 1/2 cup black beans (optional)
  • Lime wedges, for serving

Instructions

  1. Marinate the chicken: Rub chicken with jerk seasoning, olive oil, and lime juice. Let it marinate for at least 30 minutes.
  2. Cook the chicken: Grill or pan-sear chicken over medium heat for about 5–6 minutes per side until fully cooked. Slice into strips.
  3. Prepare pineapple salsa: Combine diced pineapple, red onion, bell pepper, jalapeño, cilantro, lime juice, and salt in a bowl. Mix well.
  4. Assemble bowls: Start with cooked rice as a base in each bowl. Top each bowl with sliced chicken and generous portions of pineapple salsa. Add sliced avocado on top.
