  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Chopped green onions for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve 1/2 cup pasta water and drain.
  2. Season cubed chicken with salt and pepper; heat olive oil in a skillet and cook until golden brown (5-7 minutes). Set aside.
  3. In the same skillet, sauté sliced carrots for 3-4 minutes; add garlic and cook until fragrant (about 1 minute).
  4. Reduce heat, add butter, honey, soy sauce, and pepper; simmer for 2-3 minutes until slightly thickened.
  5. Return chicken to the skillet; add drained rigatoni and toss to coat. Adjust sauce consistency with reserved pasta water if needed.
  6. Serve warm, garnished with chopped green onions.
