  • 1 ½ lbs boneless skinless chicken breast, cut into 1-inch chunks
  • 1/4 cup coconut aminos (or soy sauce for non-gluten-free)
  • 1/4 cup 100% pineapple juice
  • 2 red bell peppers, cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks
  • 1 (20 oz) can pineapple chunks in juice
  • Honey
  • Garlic
  • Ginger
  • Sesame oil
  • Salt

Instructions

  1. In a bowl, whisk together coconut aminos, pineapple juice, honey, ginger, garlic, sesame oil, and salt. Marinate chicken in half the mixture for at least an hour.
  2. Soak wooden skewers in water for 30 minutes before assembling.
  3. Thread chicken pieces alternately with red onions, pineapple chunks, and bell peppers onto skewers.
  4. Air fry at 400°F for 12-15 minutes or grill over medium heat until cooked through.
  5. While cooking, heat reserved marinade until thickened to use as a sauce.
  6. Brush kabobs with the sauce before serving.
