  • 1 1/4 cups water
  • 1/4 cup fresh lime juice
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • Pinch of salt
  • 1 packet taco seasoning (1/4 cup)
  • 1 cup frozen corn
  • 2 bell peppers, cored and sliced
  • 1 onion, peeled and sliced
  • 3 cups chopped romaine or iceberg lettuce
  • Pico de gallo
  • 1 cup plain unsweetened Greek yogurt
  • 1/2 cup fresh cilantro, finely chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt

Instructions

  1. Prepare the cilantro lime crema by mixing yogurt, cilantro, lime juice, and salt in a bowl. Refrigerate.
  2. Cook rice: Combine rinsed rice, water, lime juice, cilantro, and salt in a pot; bring to boil then simmer for 15 minutes.
  3. Sauté corn in a skillet with olive oil for 3–5 minutes; set aside.
  4. Sauté bell peppers and onions until soft; remove from skillet.
  5. Cook ground beef in the same skillet until browned; add taco seasoning and water, simmering for 5 minutes.
  6. Assemble bowls with lettuce as a base; top with corn, sautéed veggies, ground beef, pico de gallo, and drizzle with cilantro lime crema.
