  • 1 cup warm water (110°F/45°C)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil (plus extra for brushing)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • Flaky sea salt for topping

Instructions

  1. Activate the yeast by dissolving it with sugar in warm water. Let it sit for 5–10 minutes until foamy.
  2. Mix flour and salt in a bowl. Add the yeast mixture and olive oil to form a rough dough.
  3. Knead on a floured surface for about 5–6 minutes until smooth. Place in a greased bowl, cover, and let rise for one hour or until doubled.
  4. Grease muffin tin with olive oil. Punch down the dough, divide into 12 balls, and place in muffin cups.
  5. Brush tops with olive oil and sprinkle with garlic, rosemary, and flaky salt.
  6. Allow to rise again for 20 minutes before baking in a preheated oven at 400°F (200°C) for 15–18 minutes or until golden brown.
