  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese (for sauce)
  • 4 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Chopped parsley or herbs for garnish

Instructions

  1. Cook the rotini in a large pot of salted boiling water until al dente (about 10 minutes). Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper; coat with grated Parmesan.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear the chicken for 5–7 minutes until fully cooked.
  4. Add minced garlic to the skillet during the last minute of cooking and infuse into the chicken before removing it from heat.
  5. In the same skillet, melt more butter and sauté remaining garlic. Stir in heavy cream and chicken broth, bringing it to a low simmer.
  6. Whisk in cream cheese until smooth; then add mozzarella, cheddar, and Parmesan cheese until thickened.
  7. Season with Italian seasoning and basil; mix cooked rotini into the sauce until well coated.
  8. Serve hot, garnished with chopped parsley if desired.
