  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta (cubed)
  • 1 cup shredded mozzarella
  • Salt and pepper to taste

Instructions

  1. In a large deep skillet or Dutch oven, heat olive oil over medium-high heat. Add chicken seasoned with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for about 6-8 minutes until golden brown and fully cooked. Remove from pan.
  2. In the same pan, pour in chicken broth and bring to a simmer. Add rotini pasta; cover and cook for 10-12 minutes until tender.
  3. Reduce heat to low; stir in heavy cream, Velveeta cubes, and Parmesan cheese until melted and creamy.
  4. Add the cooked chicken back into the pan; stir well to combine.
  5. Sprinkle mozzarella on top; cover for about 2-3 minutes until melted.
  6. Garnish with chopped parsley before serving hot.
