- 1 cup mixed nuts (almonds, cashews, pecans)
- 1 cup dark chocolate chips (70% cocoa)
- 1/2 cup honey or maple syrup
- 1/2 teaspoon sea salt (plus extra for topping)
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 2 tablespoons coconut oil
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in short intervals until smooth.
- In a mixing bowl, combine the mixed nuts, rolled oats, honey or maple syrup, vanilla extract, and half of the melted chocolate. Mix until well-coated.
- Press the mixture firmly into the lined baking pan and drizzle with the remaining melted chocolate.
- Bake for 15-20 minutes until golden brown and sprinkle extra sea salt on top while warm.
- Allow cooling completely before cutting into squares or bars.
