  • 3 cups fresh spinach
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup cream of chicken soup (homemade or canned)
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese (or dairy-free cheese)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional, for sautéing)
  • 1/2 cup breadcrumbs (for topping, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the chopped spinach in olive oil until wilted (about 3-4 minutes).
  3. In a mixing bowl, combine the shredded chicken, sautéed spinach, sour cream, cream of chicken soup, cooked rice, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  4. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
