  • 12 oz rotini pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Cajun seasoning (for sauce)
  • Fresh chopped parsley

Instructions

  1. 1. Cook rotini pasta in salted boiling water until al dente (9-11 minutes). Reserve ½ cup pasta water, then drain.
  2. 2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add chicken strips seasoned with Cajun seasoning, garlic powder, salt, and black pepper; cook until golden brown (8-10 minutes). Remove and keep warm.
  3. 3. In the same skillet, melt another tablespoon of butter; sauté minced garlic for about 1 minute. Add heavy cream and whole milk, stirring in Velveeta until melted. Incorporate mozzarella and Parmesan; let simmer until thickened (3-5 minutes). Adjust seasoning.
