  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until soft, about 3–4 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2–3 minutes. Season with garlic powder, salt, and pepper; remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning along with more salt and pepper.
  5. Fold in shredded cheese and the cooked vegetable mixture until combined.
  6. Grease a 9-inch pie dish with cooking spray or oil and pour the mixture evenly into the dish.
  7. Bake for 40–45 minutes or until the top is golden brown and the center is set.
  8. Let cool for about 5–10 minutes before slicing and serving.
