  • 1¼ cups all-purpose flour (163 grams) fluffed and leveled
  • ⅓ cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together room temperature butter and granulated sugar until light and fluffy. Mix in vanilla extract and egg until fully combined.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt; gradually combine with the wet ingredients, stirring until just mixed.
  4. Drop rounded tablespoons of dough onto prepared baking sheet, leaving space between each cookie. Bake for about 10 minutes or until set but soft in the center. Cool completely on a wire rack.
  5. For the frosting, beat together powdered icing sugar and butter until smooth; mix in milk and mint extract to achieve desired consistency.
  6. Once cookies are cool, spread mint frosting on top of each cookie before drizzling melted chocolate ganache over them.
