  • 2 medium zucchini, sliced into half-moons
  • 2 cups cooked chicken, shredded or cubed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup sour cream or Greek yogurt
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup breadcrumbs mixed with 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
  2. In a skillet over medium heat, sauté diced onion and minced garlic until softened; add sliced zucchini and cook for another 3–4 minutes.
  3. In a large mixing bowl, combine shredded chicken, sour cream, cream of chicken soup, cheddar cheese, mozzarella cheese, thyme, paprika, salt, and pepper. Stir in the cooked zucchini mixture.
  4. Spread the combined mixture evenly in the prepared baking dish.
  5. In a small bowl, mix the breadcrumbs with melted butter and sprinkle over the casserole.
  6. Bake uncovered for 25–30 minutes until bubbly and golden brown on top.
