  • 2 medium zucchini, thinly sliced
  • 3 cups fresh spinach, chopped
  • 1 cup vegan ricotta (made from tofu)
  • 2 cups marinara sauce
  • 9 oven-ready lasagna noodles
  • 1 cup dairy-free mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine crumbled tofu, nutritional yeast, garlic powder, lemon juice, salt, and pepper; mix until smooth.
  3. In a baking dish, layer marinara sauce, noodles, half of the vegan ricotta mixture, zucchini slices, and chopped spinach.
  4. Repeat layering with remaining ingredients.
  5. Top with remaining marinara sauce and sprinkle dairy-free mozzarella cheese.
  6. Cover with aluminum foil and bake for 35 minutes. Remove foil during the last 5 minutes for a cheesy top.
  7. Let cool slightly before slicing and serving.
