  • 2 teaspoons chili powder or Tajin
  • Kosher salt and black pepper to taste
  • 3 cloves garlic, chopped
  • 1 yellow onion, sliced
  • 3 bell peppers, sliced
  • 34 cups cooked rice
  • 3 cups grilled corn kernels
  • 1/2 cup plant-based cheese
  • Shredded lettuce
  • Mashed avocado
  • Jalapeños
  • Cilantro
  • Tortillas
  • 1/3 cup extra virgin olive oil for vinaigrette
  • 1/3 cup salsa verde
  • 1/4 cup lime juice
  • 2 teaspoons spicy honey
  • 1/3 cup cilantro, chopped for vinaigrette

Instructions

  1. In a skillet, heat olive oil over high heat. Add chicken seasoned with smoked paprika, chili powder, salt, and pepper. Cook until seared (8-10 minutes), then add garlic for the last minute.
  2. In the same skillet, sauté onions until fragrant (about 5 minutes). Add bell peppers and cook until tender (another 5 minutes).
  3. Combine chicken and peppers in the skillet. Mix well.
  4. To assemble bowls: layer rice in serving bowls topped with the chicken-pepper mix and grilled corn.
  5. Garnish with avocado slices, jalapeños, shredded lettuce, plant-based cheese, and drizzle with vinaigrette.
