  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 tablespoons margarine (or butter)
  • 1/4 teaspoon cinnamon
  • 1 tablespoon brown sugar
  • 1 large apple (peeled and sliced)
  • 1/2 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and lightly grease an 8-inch round cake pan.
  2. In a large bowl, whisk together canola oil, unsweetened applesauce, egg, brown sugar, and vanilla until smooth. Add whole wheat flour, all-purpose flour, baking soda, salt, and cinnamon; mix until just combined.
  3. Pour the batter into the prepared pan and bake for 22–25 minutes until a toothpick comes out clean. Allow cooling.
  4. For the caramelized apples, melt margarine in a saucepan over medium heat and stir in cinnamon and brown sugar. Cook sliced apples until tender but not mushy.
  5. Beat whipping cream with powdered sugar and vanilla until stiff peaks form.
  6. Once cooled, top the cake with whipped cream and caramelized apples before serving.
